Pans are convenient for travel and sketching, tubes are better for studio work and large washes. Many artists use both depending on the project.
Use watercolor paper that's at least 140lb weight. Cold-pressed paper has slight texture, hot-pressed is smooth. Higher weight paper (300lb) won't buckle when wet.
Spray or drop a little water on pans a few minutes before painting to soften them. Quality pans should activate easily with a wet brush.
